For those who opted for the hot air balloon experience, the day begins with an unforgettable flight over the fairy chimneys and canyons, where hundreds of colourful balloons drift silently above the magical landscape. As the sun rises, the valley glows, creating a scene straight out of a dream.
After breakfast at the hotel, you’ll explore one of the region’s most breathtaking hiking trails: the Red Valley. This valley is known for its vividly coloured rock formations, hidden churches, and winding paths through ancient landscapes. As you walk through the valley, you’ll notice cave dwellings and monasteries carved directly into the rock, many dating back to the early Christian period.
One of the highlights of this hike is a visit to a rock-hewn church, its walls still adorned with well-preserved frescoes. Your guide will explain the fascinating history of early Christians who sought refuge in these hidden sanctuaries, escaping persecution and leaving behind a spiritual legacy that still echoes through the valley.
Lunch: Pottery Kebab – A Cappadocian Specialty
After the morning hike, it’s time to experience one of Cappadocia’s most famous traditional dishes—Testi Kebabı (Pottery Kebab). This slow-cooked delicacy is prepared in a sealed clay pot, cracked open right before serving, releasing a rich aroma of tender lamb or chicken, slow-cooked with tomatoes, peppers, and spices.
Enjoy your meal in a local restaurant inside a cave. The natural stone walls and warm lighting create a cosy and authentic ambience.
Pottery Workshop in Avanos
In the afternoon, travel to Avanos, a town famous for its centuries-old pottery tradition, which has been passed down through generations. Situated on the banks of the Kızılırmak River (Red River), Avanos has been a centre for ceramics since the Hittites (2000 BC).
At a traditional pottery workshop, you’ll watch skilled artisans shape clay on a kick-wheel, the same technique used for thousands of years. Then, it’s your turn! You’ll have the chance to try your hand at pottery-making, moulding the soft clay into your creation—a perfect souvenir to remember your time in Cappadocia.
Evening: The Mesmerizing Whirling Dervish Ceremony
As the sun sets, you’ll witness one of Turkey’s most mystical and spiritual traditions: the Whirling Dervish Ceremony. This centuries-old Sufi ritual symbolizes a journey of spiritual enlightenment.
Held in a historic stone-carved lodge, the ceremony begins with traditional Sufi music played on the ney (reed flute) and the oud (lute-like instrument). As the rhythmic melodies fill the air, the dervishes, dressed in flowing white robes, begin their graceful, trance-like spinning. Their arms are extended, one hand reaching toward the heavens, the other toward the earth, symbolizing their connection between the divine and humanity.
The atmosphere is mesmerizing, almost otherworldly, as the dervishes turn in perfect harmony, lost in their spiritual meditation. This is not a performance but a profoundly sacred practice recognized by UNESCO as an Intangible Cultural Heritage of Humanity.
After an enchanting evening, you will return to your hotel and reflect on Cappadocia’s spiritual and cultural richness. Tomorrow, you will embark on a new adventure while exploring the city’s underground cities and hidden valleys.

Cappadocia: Underground Cities, Hidden Valleys & Local Traditions
As the morning sun rises over Cappadocia’s otherworldly terrain, you’ll enjoy a leisurely breakfast at your cave hotel, surrounded by famous rock formations. The air is crisp, with the scent of freshly baked simit (Turkish sesame bread) and traditional çay (Turkish tea) aroma.
Today’s journey takes you beneath the surface to explore one of Cappadocia’s most astonishing historical sites—a vast underground city, a hidden world that once sheltered thousands of people.
Exploring the Ancient Underground City of Derinkuyu
Imagine stepping through a narrow stone entrance, descending deep below the earth into a labyrinth of tunnels, hidden chambers, and ancient living quarters. Welcome to Derinkuyu Underground City, one of the world’s largest and deepest underground cities, built by early Christians as a sanctuary from persecution.
As you move deeper into the city, your guide will reveal fascinating stories of survival. Imagine life here—entire communities living underground for months, complete with storerooms, kitchens, wine cellars, chapels, and even ventilation shafts to bring fresh air. You’ll pass through cleverly designed stone doors, which could be rolled shut in case of an attack, and discover a vast tunnel system connecting this underground refuge to other hidden cities across Cappadocia.
The sheer scale of this subterranean world is astonishing. As you stand in the extraordinary, dimly lit chambers, you’ll gain a deeper appreciation for the resilience and ingenuity of the people who once called this place home.
A Scenic Drive to Ihlara Valley
Leaving the underground city behind, the journey continues with a picturesque drive through Cappadocia’s volcanic landscape. On the way, you pass through small villages and rugged plateaus and arrive at Ihlara Valley, a lush oasis hidden within the Anatolian plateau.
Unlike most of Cappadocia’s barren, rocky terrain, Ihlara Valley is a green paradise, with towering canyon walls, a meandering river, and a network of ancient cave churches carved into the cliffs. This valley was once a thriving monastic retreat, where Byzantine monks carved out hidden chapels and dwellings in the rock face, decorating them with frescoes that still survive today.
A Gentle Hike Along the Melendiz River
With birds singing overhead and the cool shade of towering cliffs, you’ll set off on a leisurely hike through Ihlara Valley, following the winding path of the Melendiz River.
As you walk, your guide will point out hidden cave churches, including:
Ağaçaltı Church (Church of St. Daniel) – Famous for its brightly coloured frescoes of biblical scenes.
Sümbüllü Church (Hyacinth Church) – Nestled into the canyon walls, offering breathtaking views over the valley.
Yılanlı Church (Church of the Serpent) – Named for its fresco depicting Saint George slaying a dragon-like serpent.
The valley’s tranquil atmosphere, with the sound of flowing water and rustling leaves, makes this one of Cappadocia’s most peaceful and enchanting spots.
Lunch in a Riverside Village
After the hike, you’ll enjoy a traditional Turkish lunch in a charming riverside restaurant. The tables are on wooden platforms that rise above the gently flowing water.
The menu includes:
Gözleme (handmade Turkish flatbread stuffed with cheese, potatoes, or spinach), prepared fresh by local women.
Grilled trout, caught from the river and cooked over an open flame.
Organic village-grown vegetables and meze plates bursting with fresh flavours.
There’s something deeply relaxing about dining in this serene setting, watching ducks float by as you sip Turkish tea, and enjoying the simplicity of rural life.
Visiting a Traditional Cappadocian Village
In the afternoon, you’ll visit a small, traditional village where time seems to have stood still for centuries. Here, you’ll have the chance to:
See traditional stone houses, still inhabited by local families.
Meet local artisans who keep ancient crafts alive, from weaving carpets to making pottery and handmade textiles.
Learn about Cappadocia’s nomadic heritage, including how past generations lived in caves before modern houses were built.
This is a rare opportunity to experience authentic village life away from the tourist crowds and gain a deeper understanding of the traditions and hospitality of rural Turkey.
Return to Your Cave Hotel for an Evening at Leisure

- Relax on the terrace with a glass of local Cappadocian wine, watching the sunset over the fairy chimneys.
- Take an optional Turkish bath (hammam) experience, unwinding in a steam-filled chamber before a refreshing massage.
